I know it’s very exciting to move across the country, pick out an apartment, explore a new city, and look for your first job out of college. But most of that happens on the weekends…
During the week days, Code Boyfriend goes to work. And then, after filling out what feels like a million online job applications, there leaves a lot of time for day time tv shows. Do you know they show several hours of How I Met Your Mother every day if you are willing to switch networks?
Regardless of me having a lot of time on my hands, I don’t have a fully stocked kitchen. No flour, very few spices, and generally just not a lot to work with.
So sometimes, I just want something quick I can throw together.
This is one of my favorite quick dinners, whether we are eating clean that month or not.
Clean Eating Southwestern Chili
- 1 Can of Diced Tomatos
- 1 Can of Black Beans
- 1 Cup of Frozen Corn
- 1/2 Cup of Ground Turkey
- 1/2 Cup of Ground Beef
- 1 Tablespoon of Chili Powder
- 1 Teaspoon of Garlic Powder
- 1/2 Teaspoon of Salt
- 1/2 Teaspoon of Black Pepper
Brown both meats in a pot, with the chili powder, garlic powder, and the other seasonings. Once brown, add other ingredients and allow to simmer over low heat for at least 20 minutes.
Serve with sour cream, cheddar cheese, or whatever your heart desires.
For June, Code Boyfriend and I are going to be eating clean for our 30 day challenge. That means no white sugar, no white flour, and no processed foods.
…While we are in the middle of a move. We’ve had smarter ideas. Try finding something without sugar or flour in it in a fast food place. It’s really hard.
The first thing we did once we moved into the temporary apartment was stock it with meats, fruit, veggies, and whole grains.
For breakfasts, I was planning to have oatmeal. I had left of my spices in Rochester. We only took what would fit in the car, and those didn’t make the cut.
So I bought cinnamon. But that was it in the sweet spice department.
I also knew I had a long day of moving in ahead of me and wanted to make something with a little more protein.
French Toast Oatmeal was born. Now, I doubt I’m the first person to come up with this, but at 6:15, I thought it was a stroke of sheer genius.
The texture is amazing, custard-y and soft. And it kept me full through lunch.
French Toast Oatmeal (Serves 1)
- 1 Egg
- 1 Teaspoon of Cinnamon
- 1 Teaspoon of Vanilla Extract
- 1 Tablespoon Agave Nectar (sweeten it however you like, this made it sweet enough for me, but I wish I had maple syrup)
- 1/4 Cup of Quick Cooking Steel Cut Oats
- 3/4 Cup of Milk (We had skim and it worked great!)
Combine all of the ingredients in a pot. Whisk to ensure the egg is throughout incorporated before you turn on the heat. This helps keep this from being scrambled eggs in oatmeal, which really doesn’t sound as good.
